Shrimp Salad Boats

Ingredients

2 Pounds Fresh or frozen shrimp
2 Cups diced celery
1/2 Cup mayonnaise
Salt & Pepper to taste
24 Poppy seed rolls
Butter
Chopped fresh or freeze-dried chives

Directions

1. Shell & devein the shrimp. Cook according to package directions. Drain & Chill.

2. Cut 12 shrimp in 1/2 lengthwise.

3. Chop the remaining shrimp and mix with the celery, mayonnaise, and seasoning. Chill

4. Slice the rolls almost through, leaving a hinge.

5. Spread with butter and sprinkle chives.

6. Fill each roll with a heaping tablespoon of shrimp salad and garnish with a shrimp half.

7. Wrap & chill until serving.

Comments

Put shrimp half on top for greater appeal
